Ingredients

  • 1 (340g) can SPAM® Maple Flavoured, cubed
  • 2 cups cooked quinoa
  • 2 cups quartered, roasted brussels sprouts
  • 1 Gala apple, sliced
  • 1 cup dried cranberries
  • 1 cup chopped pecans, toasted
  • 1 small red onion, chopped
  • Maple Orange Vinaigrette; recipe follows
  • 2 tablespoons maple syrup
  • 2 tablespoons orange juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup olive oil

Directions

  1. In large skillet, over medium-high heat, cook cubed SPAM® Maple Flavoured 3 to 5 minutes or until browned.
  2. Divide prepared SPAM® Maple Flavoured cubes, quinoa, brussels sprouts, apple, cranberries, pecans and red onion among 4 individual serving bowls.
  3. Serve with Maple Orange Vinaigrette. (Combine ingredients in small jar. Cover and shake to combine.)
