SPAM® Brulee

It’s sweet. It’s classy. It’s hard on the outside, soft on the inside. It’s an enigma. The 8th wonder of the world. It’s the SPAM® Brulee.


  • 2 slices SPAM® Classic
  • 420mL heavy cream
  • 3 egg yolks
  • 2 tbsp sugar
  • 1/2 tbsp vanilla extract
  • 2 tbsp brown sugar
  • 1 tbsp cinnamon


  1. In a bowl, combine 420mL heavy cream, egg yolks, sugar, and vanilla extract.
  2. Mix gently with a whisk until sugar has completely dissolved. Set aside.
  3. In a pan, simmer remaining cream over low heat. Temper by adding a small amount to the egg mixture before combining everything back in the pan.
  4. Cook over low heat while stirring continuously until sauce thickens.
  5. Portion into 4, 9cm ramekins. Cover and chill in the refrigerator overnight.
  6. Preheat oven at 180⁰C or oven toaster on high.
  7. Combine sugar and cinnamon. Set aside.
  8. Cut SPAM® into same diameter of ramekins and sprinkle with cinnamon mixture.
  9. Bake in the oven until the top becomes even and caramelized. Top into set cream mixture. Serve.
