Ingredients

  • 1 tbsp peanut oil
  • 1 can SPAM® Hickory Smoke, cubed
  • 3 pieces ginger slices
  • 8-10 pieces dried chili
  • 1/3 cup green and red bell pepper, sliced
  • 1/4 cup leeks, sliced
  • 2 tbsp peanuts, skinless
  • 1 tsp sesame oil
  • Sichuan peppercorn, optional
  • FOR KUNG PAO SAUCE:
  • 2 tbsp soy sauce
  • 1 tbsp hoisin
  • 1 tbsp rice vinegar
  • 1 tbsp xiaoxing or rice wine
  • 1/2 tbsp sugar
  • 1/2 cup water
  • 2 tsp cornstarch

Directions

  • 1.For Sauce: Mix all ingredients together and set aside.
  • 2.Heat peanut oil.
  • 3.Stir fry ginger, chili, bell pepper, and leeks.
  • 4.Add cubed SPAM® Hickory Smoke and peanuts.
  • 5.Toss in sesame oil and Sichuan peppercorn.
  • 6.Add sauce and continue mixing until sauce coats the SPAM® Hickory Smoke and vegetables.
  • 7.Turn off fire and serve with white rice.
